Tartarik asit (E 334); bitkilerde yaygın olarak bulunan, kristal yapılı, renksiz organik asit. Başta gıda sanayi olmak üzere çeşitli sanayi dallarında kullanılan bu asit, şarabın mayalanması esnasında potasyumun yan ürünü olarak elde edilir. Tartarik asidi bu karışımdan ilk olarak Carl Wilhem Scheele ayırmıştır. Şarap üretiminede ortaya çıkan atıklar potasyum hidroksitle nötralleştirilir. Çöken kalsiyum tartarın sülfürik asitle işlenmesiyle de tartarik asit oluşur.  Tartarik asit gazozlarda, jelatinli tatlılarda, metallerin temizlenmesinde ve cilalanmasında ve yün boyama işlerinde kullanılır. Antimon potasyum tartarları da böcek ilacı ve mordan olarak kullanılır. Üzümsü meyvelerde toplam asidin %1,6-2,8'lik bölümünü tartarik asit oluşturmaktadır. Tartarik asidin dört steroizomeri vardır. Bunlar üzümde ve başka meyvelerde bulunan d (deksro) tartarik asit, rasemik karışımdan elde edilen l (levo) tartarik asit ve yapay olarak elde edilen rasemik karışım dl tartarik asit ile mezo tartarik asittir.  Tartarik asit, kristal yapılı olan bu asit genel olarak bitkilerde ve meyvelerde yaygın şekilde görülür. Tartarik asit yün boyama, cilalama, jelâtin, tatlılar ve gazozların içerisinde sık kullanılmaktadır. Bunun dışında ise antimon potasyum tartarları da genelde böcek ilaçları ile mordan olarak tercih edilip kullanılır. Çoğunluklu üzüm meyvesinin içerisinde bulunan tartarik asit üzüm dışında ki bazı meyvelerde de oluşmaktadır. Ancak bu meyvelerde görülen tartarik asitlere deksro tartarik asit adı verilmektedir. Rasemin karışımından oluşan tartarik aside ise levo adı verilmiştir. Tartarik asitler suda çözülebilen dikarboksilik asitler arasında yer alır. Kullanım Alanları

Gıdalara ekşimsi bir tat vermek amacıyla kullanılır.
E334 olan tartarik asit iyi bir antioksidandır.
Tartarik asidin en yaygın kullanıldığı alan gazoz yapımıdır. Adeta gazoza tat vermek için kullanılan tartarik asit gazozun olmazsa olmaz bileşenidir.
Yünlerin boyanması için tercih edilir.
Metallerin parlatılması, cilalanması ve temizlenmesi için kullanılabilir.
Fırın ürünlerinde karbondioksiti serbest bırakmak amacıyla kullanılır.
Jelatinli tatlıların olmazsa olmazı tartarik asit, genelde beze, lokum ve krem şanti gibi ürünlerde kıvam arttırıcı olarak tercih edilir.
Tartarik asidin üzümden elde edilmiş hali genelde pastacılıkta çok tercih edilir. Pastaların kabartılması için tartarik asit kabartma tozu yerine tercih edilebilir.
Meyvelerde sık bulunan, mayhoş ve kuvvetli bir tada sahip olan tartarik asit şarap yapımında, şarabın mayalanması için tercih edilir.
Marmelat ve reçellerin yapımında kullanılır.

Tartarik asit, kristal yapılı olan bu asit genel olarak bitkilerde ve meyvelerde yaygın şekilde görülür. Organik bir asit olan tartarik asidin kimyasal formülü C4H6O6 şeklindedir ve yoğunluğu ise 1,788g/cm olmaktadır. Tartarik asit başta sanayi olmak üzere farklı sanayi dallarında da kullanılır. Tartarik asit yün boyama, cilalama, jelâtin, tatlılar ve gazozların içerisinde sık kullanılmaktadır. Bunun dışında ise antimon potasyum tartarları da genelde böcek ilaçları ile mordan olarak tercih edilip kullanılır. Çoğunluklu üzüm meyvesinin içerisinde bulunan tartarik asit üzüm dışında ki bazı meyvelerde de oluşmaktadır. Ancak bu meyvelerde görülen tartarik asitlere deksro tartarik asit adı verilmektedir. Tartarik asit Kullanım Alanları

 

Gıdalara ekşimsi bir tat vermek amacıyla kullanılır.
E334 olan tartarik asit iyi bir antioksidandır.
Tartarik asitin en yaygın kullanıldığı alan gazoz yapımıdır. Adeta gazoza tat vermek için kullanılan tartarik asit gazozun olmazsa olmaz bileşenidir.
Yünlerin boyanması için tercih edilir.
Metallerin parlatılması, cilalanması ve temizlenmesi için kullanılabilir.
Fırın ürünlerinde karbondioksiti serbest bırakmak amacıyla kullanılır.
Jelatinli tatlıların olmazsa olmazı tartarik asit, genelde beze, lokum ve krem şanti gibi ürünlerde kıvam arttırıcı olarak tercih edilir.
Tartarik asidin üzümden elde edilmiş hali genelde pastacılıkta çok tercih edilir. Pastaların kabartılması için tartarik asit kabartma tozu yerine tercih edilebilir.
Meyvelerde sık bulunan, mayhoş ve kuvvetli bir tada sahip olan tartarik asit şarap yapımında, şarabın mayalanması için tercih edilir.

L(+) Tartarik Asit kristalleşmenin iki aşaması uygulanmaktadır. Doğal Tartarik Asit 2 saflık derecesine sahiptir. L(+) Tartarik Asit yani doğal tartarik asit ham kristal yeniden çözülür ve daha sonrasında yeniden kristal yapıya dönüştürülür. Bu şekilde üretilen L(+) Tartarik Asit yani doğal tartarik asit uygulama safhasında işlem kalıntılarını ortadan kaldırır.

Tartarik Asit doğrudan Güneş ışığı gören alanlarda depolanmamalıdır. Tartarik Asit doğrudan Güneş ışığı gören alanlarda depolanırsa glioksilik asit'e dönüştüğü görülmektedir. Tartarik Asit, bu koşullar altında depolandığında ortaya hidrojen peroksit ve glioksilik asit formik asit üretmek üzere birbiriyle reaksiyona girecektir. Bundan dolayı kararlı bir görünüm sergilemez.

TARTARİK ASİT NERELERDE KULLANILIR?
Tartarik Asit, oral uygulama yöntemiyle, sodyum bi karbonat ile etkileşimi neticesinde, sodyum karbonat üretmek için kullanılır. Bunun sonucunda tartarik asitin yapmış olduğu bu etki ile karbondioksit mideyi uzatır.
Tartarik Asit birçok gıda ürününe ekşi bir tat vermek amacıyla ve antioksidan olarak kullanılır.
Tartarik Asit, Pasta börek vs. Gibi fırın ürünlerine katılan gıda katkı maddelerinde, kabartma özeliği katması amacıyla kullanılır.
Tartarik Asit gıdalarda koruyucu katkı maddesi olarak kullanılır. Aynı zamanda gıdalara lezzet verir. Tartarik Asit genellikle karbonatlı içecekler, meyve şekerlemeleri ve efervesan tabletlerdeki ürünlerin üretiminde kullanılır.
Tartarik Asit, Altın ve Gümüş kaplama süreçlerinde de kullanılmaktadır. Aynı zamanda tartarik asit, metallerin cilalanması ve temizlenmesinde ve derinin bronzlaştırılmasında kullanılır. Dolayısı ile tartarik asit' in Güneş kremi imalatında da kullanılabileceğini düşünebiliriz.
Tartarik Asit, mavi mürekkeplerin imalatında kullanılmaktadır. Bunun yanında, aynalara gümüş rengini vermek amacıyla Gümüş Nitrat ile tepkimeye giren bir bileşen olarak Tartarik Asit kullanılır.
Tartarik Asit' in ester türevleri ile kumaş boyama işlemleri yapılmaktadır. Tartarik asit burada gerekli olan işlemin yapılmasında faydalı olacaktır.
Tartarik Asit, şarap üretiminde, bitmiş şarap ürünlerinin rengini, kimyasal stabilitesini ve tadını korumak amacıyla kullanılır. Tartarik Asit Şarapların asitliğini kontrol eder.
Tartarik Asit şarap üretiminde kullanılmasının nedenlerinden bir tanesi ortamın pH ını düşürerek istenmeyen bakterilerin üremesini engeller.
Tartarik Asit, organik kimyada kiral moleküllerin üretimi için kullanılan faydalı bir kimyasaldır.
Tartarik Asit kremi suya ilave edildiğinde, bakır madeni paraları çok iyi temizleyen bir süspansiyon oluşturur.

Tartaric acid is a white, crystalline organic acid that occurs naturally in many fruits, most notably in grapes, but also in bananas, tamarinds, and citrus.[4] Its salt, potassium bitartrate, commonly known as cream of tartar, develops naturally in the process of winemaking. It is commonly mixed with sodium bicarbonate and is sold as baking powder used as a leavening agent in food preparation. The acid itself is added to foods as an antioxidant E334 and to impart its distinctive sour taste.
 

Tartaric acid is an alpha-hydroxy-carboxylic acid, is diprotic and aldaric in acid characteristics, and is a dihydroxyl derivative of succinic acid.

 

History
Tartaric acid has been known to winemakers for centuries. Written record of its extraction from wine-making residues was made circa 800 AD, by the alchemist Jābir ibn Hayyān.[5] The chemical process for extraction was developed in 1769 by the Swedish chemist Carl Wilhelm Scheele.[6]

Tartaric acid played an important role in the discovery of chemical chirality. This property of tartaric acid was first observed in 1832 by Jean Baptiste Biot, who observed its ability to rotate polarized light.[7][8] Louis Pasteur continued this research in 1847 by investigating the shapes of sodium ammonium tartrate crystals, which he found to be chiral. By manually sorting the differently shaped crystals, Pasteur was the first to produce a pure sample of levotartaric acid.[9][10][11][12][13]

Naturally occurring tartaric acid is chiral, and is a useful raw material in organic chemical synthesis. The naturally occurring form of the acid is dextrotartaric acid or L-(+)-tartaric acid (obsolete name d-tartaric acid). Because it is available naturally, it is slightly cheaper than its enantiomer and the meso isomer. The dextro and levo prefixes are archaic terms.[14] Modern textbooks refer to the natural form as (2R,3R)-tartaric acid (L-(+)-tartaric acid), and its enantiomer as (2S,3S)-tartaric acid (D-(-)-tartaric acid). The meso diastereomer is (2R,3S)-tartaric acid (which is identical with ‘(2S,3R)-tartaric acid').
 

Whereas the two chiral stereoisomers rotate plane polarized light in opposite directions, solutions of meso-tartaric acid do not rotate plane-polarized light. The absence of optical activity is due to a mirror plane in the molecule [segmented line in picture below].[15][16]

Tartaric acid in Fehling's solution binds to copper(II) ions, preventing the formation of insoluble hydroxide salts.

L-(+)-Tartaric acid
The L-(+)-tartaric acid isomer of tartaric acid is industrially produced in the largest amounts. It is obtained from lees, a solid byproduct of fermentations. The former byproducts mostly consist of potassium bitartrate (KHC4H4O6). This potassium salt is converted to calcium tartrate (CaC4H4O6) upon treatment with milk of lime (Ca(OH)2):[19]

Racemic tartaric acid
Racemic tartaric acid (i.e.: a 50:50 mixture of D-(-)-tartaric acid and L-(+)-tartaric acid molecules, racemic acid) can be prepared in a multistep reaction from maleic acid. In the first step, the maleic acid is epoxidized by hydrogen peroxide using potassium tungstate as a catalyst.[19]

meso-Tartaric acid is formed via thermal isomerization. dextro-Tartaric acid is heated in water at 165 °C for about 2 days. meso-Tartaric acid can also be prepared from dibromosuccinic acid using silver hydroxide:[20]

meso-Tartaric acid can be separated from residual racemic acid by crystallization, the racemate being less soluble.
Reactivity
L-(+)-tartaric acid, can participate in several reactions. As shown the reaction scheme below, dihydroxymaleic acid is produced upon treatment of L-(+)-tartaric acid with hydrogen peroxide in the presence of a ferrous salt.

Commercially produced tartaric acid
Important derivatives of tartaric acid include its salts, cream of tartar (potassium bitartrate), Rochelle salt (potassium sodium tartrate, a mild laxative), and tartar emetic (antimony potassium tartrate).[22][23][24] Diisopropyl tartrate is used as a co-catalyst in asymmetric synthesis.
 

Tartaric acid is a muscle toxin, which works by inhibiting the production of malic acid, and in high doses causes paralysis and death.[25] The median lethal dose (LD50) is about 7.5 grams/kg for a human, 5.3 grams/kg for rabbits, and 4.4 grams/kg for mice.[26] Given this figure, it would take over 500 g (18 oz) to kill a person weighing 70 kg (150 lb), so it may be safely included in many foods, especially sour-tasting sweets. As a food additive, tartaric acid is used as an antioxidant with E number E334; tartrates are other additives serving as antioxidants or emulsifiers.

When cream of tartar is added to water, a suspension results which serves to clean copper coins very well, as the tartrate solution can dissolve the layer of copper(II) oxide present on the surface of the coin. The resulting copper(II)-tartrate complex is easily soluble in water.

Unpurified potassium bitartrate can take on the color of the grape juice from which it was separated.
Tartaric acid may be most immediately recognizable to wine drinkers as the source of "wine diamonds", the small potassium bitartrate crystals that sometimes form spontaneously on the cork or bottom of the bottle. These "tartrates" are harmless, despite sometimes being mistaken for broken glass, and are prevented in many wines through cold stabilization (which is not always preferred since it can change the wine's profile). The tartrates remaining on the inside of aging barrels were at one time a major industrial source of potassium bitartrate.

Tartaric acid plays an important role chemically, lowering the pH of fermenting "must" to a level where many undesirable spoilage bacteria cannot live, and acting as a preservative after fermentation. In the mouth, tartaric acid provides some of the tartness in the wine, although citric and malic acids also play a role.

L‘acide tartrique est le nom usuel de l'acide 2,3-dihydroxybutanedioïque, qui a pour formule brute C4H6O6. C'est un acide α-hydroxylé. Sa formule semi-développée est HOOC-CHOH-CHOH-COOH. L'acide tartrique est présent dans de nombreuses plantes. Il fut isolé pour la première fois en 1769, par le chimiste suédois Carl Wilhelm Scheele, qui fit bouillir du tartre avec de la craie et décomposa le produit en présence d'acide sulfurique. Il peut être synthétisé. C'est le principal acide du vin (provenant du raisin), sous sa forme naturelle c'est-à-dire L-(+).
 

Les ions tartrates sont utilisés dans la liqueur de Fehling pour tester la présence d'aldéhydes. Le tartrate de potassium évite une cristallisation du vin en bouteille, phénomène exploité dès l'Antiquité par les Grecs et les Romains.

 

Chimie
L'acide tartrique possède deux atomes de carbone asymétriques mais ne possède que trois stéréoisomères car le (R,S)-acide tartrique est une forme achirale dite « méso » car possédant deux atomes de carbone asymétriques tout en ayant un centre de symétrie au milieu de ces deux atomes de carbone.
 

L'acide nitrique oxyde l'acide tartrique en acide oxalique, tandis que l'acide sulfurique concentré le convertit en acide acétique. Chauffé en présence de dioxyde de manganèse et d'acide sulfurique dilué, L'acide tartrique se décompose en CO2 et en acide formique.

Une distillation à sec en présence d'hydrogénosulfate de potassium produit de l'acide pyruvique11.

 

Propriétés
L'acide tartrique se présente sous la forme de cristaux transparents incolores solubles dans l'eau. La présence d'acide tartrique peut être testée par le résorcinol. L'acide tartrique active la salivation ; il est légèrement laxatif et diurétique.
 

Les bases conjuguées de l'acide tartrique sont l'ion tartrate, -OOC-(CHOH)2-COO- et l'ion bitartrate ou hydrogénotartrate, HOOC-(CHOH)2-COO-. Ainsi un des sels les plus communs est le (2R,3R)-bitartrate de potassium, un énantiomère présent dans le raisin et le vin12.

Isomérie

Acide L-(+)-tartrique

 

Acide D-(-)-tartrique
Louis Pasteur a étudié l'activité optique des isomères optiques des tartrates. La fermentation des jus de raisin produit sur la surface interne du récipient une croûte blanche de tartrate acide de potassium ou tartre brut. Ce dernier, bouilli en présence d'acide chlorhydrique dilué, précipite sous forme de tartrate de calcium, par addition d'hydroxyde de calcium. Son traitement par de l'acide sulfurique dilué libère la forme dextrogyre (+) de l'acide tartrique, composé qui fait tourner le plan de polarisation de la lumière polarisée vers la droite. L'acide L-(+)-tartrique a une température de fusion de 171 à 174 °C et est facilement soluble dans l'eau et l'alcool. l'acide tartrique est insoluble dans l'éther.
 

l'acide tartrique existe une autre forme de l'acide tartrique, l'acide D-(-)-tartrique (lévogyre). Cet autre énantiomère fait tourner le plan de polarisation de la lumière vers la gauche. l'acide tartrique fut préparé pour la première fois vers 1847 par Louis Pasteur dans le cadre de son doctorat, à partir du sel (double) d'ammonium et de sodium.

L'acide tartrique préparé en laboratoire est un mélange équimolaire des formes dextrogyre (+) et lévogyre (-). l'acide tartrique, dit racémique, du nom ancien de ce produit, l'acide racémique, ne modifie pas la direction du plan de polarisation de la lumière.

l'acide tartrique existe une troisième forme, l'acide mésotartrique, qui, achirale, ne modifie pas la direction du plan de polarisation de la lumière.

 

Utilisations
l'acide tartrique est utilisé comme acide solide dans les cachets contre les indigestions et les maux de tête. Lorsqu'on les met dans l'eau, l'acide se dissout et réagit avec le bicarbonate de sodium pour libérer du dioxyde de carbone gazeux.
 

l'acide tartrique est utilisé dans l'alimentation comme additif alimentaire (numéro E33413), principalement comme antioxydant, régulateur de pH et séquestrant14. l'acide tartrique est autorisé dans la plupart des produits alimentaires et dans certains produits spécifiques tels que les produits de cacao et de chocolat, les confitures et gelées, les fruits et légumes en conserve, les pâtes fraîches et les biscuits et biscottes destinés aux nourrissons13.

l'acide tartrique possède aussi une autre utilisation assez courante : dans certains cas précis, il permet, par ses propriétés de recristallisation (acide tartrique L-(+) et D-(-)), de séparer deux énantiomères.

En analyse gravimétrique, on utilise une solution d'acide tartrique pour précipiter le calcium, le potassium, le magnésium, la scandium, le strontium et le tantale
